Veronica's Banana Loaf Cake

Veronica came across this recipe when she was looking for creative breakfast ideas for her daughter. Since then, she's put her own spin on it by experimenting with different add-ins. With just ripe bananas, eggs and almond flour, this loaf comes together in one bowl in about ten minutes. The best part? No refined sugar needed! The bananas do all the sweetening, while almond flour keeps every slice hearty and wholesome.

I found this recipe when I was trying to get creative with breakfast ideas for my daughter. It mattered to me to find options that didn't start the day with added sugar. The bonus is that we make it together and have fun doing it. So easy! It's also a great way to use up the inevitable old bananas we all seem to accumulate.

Ingredients

  • 3 ripe bananas
  • 2 eggs
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • 2 cups almond flour
  • ¾ cup of add ins such as raisins, dried currents, dried cranberries or chocolate chips (optional)

Instructions

  1. In a large mixing bowl, mash the bananas with a whisk. Add the eggs and beat until well-mixed.  
  2. Add the salt and baking powder and mix again briefly.  
  3. Add the almond flour and mix to combine. Fold in the add-ins if using.  
  4. Pour the batter into a well-greased loaf pan. Bake at 325°F (160°C) for 50-55 minutes.
